I would have waited until Thursday to post this, but wanted to get this recipe out there in case anybody wants to try it. This cake is a Thanksgiving tradition in my family. It is delicious, and it's even vegan! Poor Man's Cake
Cook raisins in 2 cups of cold water for 15 minutes (med. to med. high heat). Then add 1 cup of cold water and stir. Then add 1 Tbsp of baking soda and stir. In a separate bowl, mix sugar, shortening, cinnamon, cloves, allspice, nutmeg, salt and flour. Then pour mixture into raisin mixture a little at a time and stir well. Pour into a greased baking pan (13"x9"). Bake at 350F for 50 minutes to 1 hour. *NOTE: I add a little bit of coffee as well as it seems to make it darker. I am so thankful for all my readers here!
